Unusual, easy and fun way to cook zucchini noodles

I became a real fan of zucchini noodles and cook this dish quite often. Naturally, I tried to experiment with it and come up with different interesting ways to cook it and decorate it.
Spiralized zucchini dish is becoming more and more popular among people who are trying to cut on carbs but still enjoy their favourite dishes. Zucchini squash itself has quite neutral taste and readily absorbs any other flavours added during cooking thus making it a desirable ingredient for cooking.
One morning I decided that I am getting bored with just zucchini noodles and wanted to create something different and fun. So, I came up with:
Zucchini Noodles Nest with Fried Egg
I must say that the taste of the dish is no different than if I just fried noodles and eggs separately, however, my dish looks different and it is fun. Hopefully it will attract even picky eaters (my picky eater did not budge unfortunately lol )
3 Large Zucchini Squash, spiralized
3 eggs
½ small yellow onion, chopped finely
2 table spoons of olive oil
1 table spoon of almond flour
1 table spook of coconut flour
½ tea spoon of xanthan gum
Salt, pepper, spices to your liking

In a large bowl combine zoodles, both flours, xanthan gum, salt, pepper, spices, mix thoroughly (I usually use 2 spatulas to mix ingredients) trying to coat zucchini with flour very well.
Heat olive oil in a large frying pan (since rock frying pan came out, I replaced all my frying pans with this one. It is not heavy and nothing sticks to it; I mean – nothing!). Use medium to high heat, add zucchini mix and let it cook on “high” setting. Watch closely so the mixture does not burn, mix carefully to let zucchini cook evenly. Once noodles are cooked, reduce heat to low. Using two spatulas, separate zucchini mixture into 3 piles. For the “nest” from each pile – leave an opening in the middle of the pile while forming “walls” around the opening.
Break an egg with a knife carefully and pour the whole egg into the “nest”, one egg per nest.
Cover frying pan with a lid. My frying pan is too large and I do not have a lid that matches its size. I just roll a piece of tin foil and cover the pan with it.
Let it cook on low for about 10 minutes or until egg is cooked to your liking (runny, hard etc).
Carefully scoop a nest with large spatula and place on warmed plate.
