It was Monday evening; I was tired and did not go shopping to cook anything special. However, hungry people requested dinner and I had to improvise. I created this recipe on the go while searching through my refrigerator.
Dinner turned out to be very yummy and filling. Juices from meat and garlic spread soaked into potato and gave it an amazing delicious flavor. This is a supper dish on the go, takes about 5 minutes to prepare and you do not really have to watch it while it is baking.
Baked potato stuffed with ground turkey and fresh cucumber
2 Large new potatoes (one for each hungry person)
50-80 grams of ground turkey
1 fresh small cucumber
2 tea spoons of herbal garlic spread
Grated cheese (optional, I did not use it, but I think it would fit in this recipe perfectly).
Bread crumbs (very optional)
How to cook:
Wash potatoes very well. With small knife cut out the middle of the potato, try to scoop as much as you can, thus you are able to fit more stuffing.
Shred pieces of potatoes (the ones that you scooped out) using the small side of a grater, then shred cucumber. Add ground turkey and garlic spread. Add salt, pepper and other spices of your liking. Mix everything well together (at this point also add cheese and bread crumbs if using those).
Fill up holes in potatoes with the mixture. Press well.
Heat oven to 380F, bake for about 35-45 minutes (potatoes should be soft when poked with a knife).
Serve with sour cream.
