I do not like cooking, but I prefer home-made food.  Thus I either come up with my own simple, but very delicious recipes or simplify recipes from internet.

I “invented” this banana chocolate chip muffin recipe out of the need to be able to bake something very simple yet very delicious.  These muffins are always a hit in my house and wherever I go.  They are so easy to make, my 11 year old son makes them on his own, I only help with an oven part.

Banana chocolate chip muffins

Ingredients (yield 6 muffins)

3 medium to large bananas

3 eggs

1/2 to 1 cup semi-sweet chocolate chips

1 to 1.5  cup Quaker banana muffin mix (you can use any other brand.  Sometimes I even use Chocolate chip cookie oatmeal mix)

2-3 table spoons of olive oil

Turn on your oven to about 380-390 F and let it heat.

In the meanwhile mash bananas with fork or using hand blander, add eggs and mix together.  We use hand blender because we are lazy (surprise!!!!).  However, if you prefer having small chunks of banana in your muffins, then use a fork.  Add chocolate chips and oil, mix.  Add muffin mix and stir with a spoon.  I would suggest you add about 1 cup of mix first and check the consistency.  It should be thick, but still runny.  How much of muffin mix you use depends on the size of bananas and eggs.  Sometimes I only need 1 cup, sometimes I use up to 1 and 1/2 cup.

Using a cooking brush, slightly greasy each cup of your muffin tray.  I have been using silicone baking trays for years and convinced that they are the best non-sticky inventions.  Nothing sticks to them.

 

Fill up each muffin cup and place your tray in the oven.  Bake for about 30 to 45 minutes depending on your oven.  Remove, let chill for about 15-20 minutes, that will make removal of the muffins much easier.  Enjoy!
